About Firedoor and Gildas

One of Sydney’s hottest restaurants, Firedoor works intuitively with fire and seasonal ingredients. The kitchen is entirely powered by wood and everything is cooked to order. We burn a variety of woods daily to create embers which are then used to cook in a way that enhances the natural characteristics of the ingredients.

Chef and owner, Lennox Hastie is fascinated by fire; his dedication and uncompromising focused approach to cooking with fire results in a daily menu of precision and subtlety.

Inspired by Lennox Hastie’s time in the foothills of the Basque country, Gildas is an homage to the original pintxo created in San Sebastian of three simple ingredients; a guindilla pepper, an olive, and an anchovy – a creation which coincided with the screening of the eponymous film starring the stunning Rita Hayworth, Gilda, at the San Sebastian Film Festival in 1946.

The Gildas menu is a changing exploration of incredible Spanish and Australian food and drinks, and can be enjoyed as a quick bite to eat with a sherry, or a full meal experience.
